This sumptuous Italian meatloaf with spinach and cheese is one of those wonderfully healthy food recipes that makes a hearty main dish big enough to feed a crowd.
Meatloaf is always a family favorite. This Italian spinach and ground turkey meatloaf is so flavorful the cook won’t need to worry about what to do leftovers. In the rare case that there are any, leftovers will quickly be snatched up for lunches, meatloaf sandwiches, and maybe even in a midnight-forage through the ‘fridge.
Italian Turkey Spinach Meatloaf with Cheese
Yields 10 – 12 generous main-dish servings
Ingredients:
2 tablespoons olive oil
2 cups onion, chopped
4 cloves garlic, crushed and minced
2 medium carrots, grated
4 eggs, beaten
¼ cup Parmesan cheese, grated
2 teaspoons paprika
½ teaspoon cayenne pepper
½ teaspoon dried rosemary
2½ pounds ground turkey
1 can tomato paste
½ cup seasoned Italian bread crumbs
2 10-ounce packages frozen spinach, thawed and squeezed dry
2 cups Mozzarella cheese, grated
Instructions:
Preheat oven to 375°F.
Prepare an oblong 2-quart casserole pan with non-stick cooking spray and set aside.
In a large skillet, sauté the onions, garlic and carrot in the olive oil until the onions have softened a little; remove from heat.
Mix together the beaten eggs, Parmesan cheese, paprika, cayenne pepper, and dried rosemary.
In a large mixing bowl add the egg mixture to the ground turkey meat; combine well.
Add the remaining ingredients and the contents of the skillet to the meatloaf mixture, kneading well, until all ingredients are thoroughly distributed.
Form the meat mixture into a firm loaf and place it into the casserole dish.
Do not pat the mixture down, but leave a ½” – 1” space between the sides of the meatloaf and the casserole dish.
Place the casserole in the center of the preheated oven, and bake uncovered at 375°F for 1 – 1 ½ hours. (The cooking time will vary according to the thickness of the loaf.)
Meatloaf will be done when nicely browned and internal temperature reaches 180°F.
Remove casserole from oven and allow the meatloaf to rest for 10 – 12 minutes before slicing to serve.
