Broccoli Slaw

A Crunchy, Refreshing Alternative to Broccoli Salad

Broccoli slaw is tossed with Ramen noodles, green onions and peanuts in this crunchy, salty and satisfying salad.

Broccoli slaw is one of those super nutritious foods. It is low in calories, has no fat and no cholesterol. And it is chock full of Vitamins A and C. So you can afford to jazz it up a bit with things like Ramen noodles and peanuts.

Be sure to use unsalted peanuts in this broccoli slaw recipe. The seasoning packet from the Ramen noodles is used in the salad dressing, and it provides plenty of salt in this recipe.

Although this recipe calls for 1/4 cup of granulated white sugar, if you're making it for the family, you may want to increase the amount of sugar. Kids tend to like things sweeter, and this recipe is a great way to get kids to eat broccoli.

This broccoli slaw recipe is a perfect side dish for potlucks and summer parties, but it is easy enough to whip up on an average weeknight, too. Serve this broccoli slaw with oven fried lemon chicken, shrimp quesadillas, juicy southwestern burgers, or hot dogs.

Make the slaw first: Using a rolling pin, crush the Ramen noodles. This can be done while the noodles are still in the package, or you can remove the noodles and place them in a sealed zip-loc bag and then crush them.

Toss together the broccoli slaw, crushed Ramen noodles and green onions in a large salad bowl. Set aside.

To make the dressing: Whisk together the sugar, oil, vinegar and Ramen seasoning packet in a small bowl. Pour the dressing over the slaw and toss well to coat evenly. Sprinkle the peanuts on top. Serve immediately.
