These oatmeal chocolate chip cookies are not really low in calories. But they do offer enough nutritional value to make a fairly healthy snack, especially when you consider the alternatives: candy bars, Twinkies, gummies, chips, etc. that are heavy on the sugar and fat and offer practically no nutritional value at all.
The strawberries really make these strawberry chocolate oatmeal cookies special. Make these cookies in the late spring when strawberries are at their peak, and you won't be disappointed. Don't be intimidated by the long list of ingredients. The recipe is just as simple as any other drop cookie recipe.
These oatmeal cookies are crisp on the outside, yet soft and chewy on the inside. And the strawberry and chocolate chunks really punctuate the rustic oatmeal flavor.
These oatmeal cookies also travel well, so they make a great take-along dessert for pot luck dinners, picnics or the PTA bake sale. Serve them with a tall glass of milk for a satisfying, wholesome snack that will keep the kids going all afternoon long.
Preheat oven to 350 degrees F. Position the oven rack in the middle of the oven. Line two cookie sheets with parchment paper or Silpat mats.
In a large mixing bowl, beat melted butter and sugars together until fluffy. Beat in the egg substitute and vanilla extract. Set aside. In a small mixing bowl, whisk together the flours, baking soda, baking powder, salt, cinnamon and rolled oats. Add dry ingredients to the wet ingredients, mixing until well combined. Fold in the chocolate chips, strawberries and chopped walnuts.
Using a small ice cream scoop or large melon baller, drop cookie batter onto prepared cookie sheets. Bake cookies 14-16 minutes until crisp around the edges and just set in the middle. Be careful: Don't let the cookies get too brown. Allow cookies to cool about 10 minutes before removing from cookie sheets.
