Roasted Salmon with an Asian Flair

This roasted salmon recipe is marinated in an orange and soy sauce marinade for a moist and flavorful dish.

You probably are aware of the health benefits of salmon, but in case you aren't, you might like to know that this fish is not only flavorful, it is full of heart-healthy omega-3 fatty acids (the good kind of fat).

When shopping for salmon, look for wild salmon, if possible. It generally has fewer contaminents than farm-raised salmon. If you shop at high-end stores like Whole Foods Market, it is easy to find out the source of the fish. If you're shopping at a regular grocery store, read the packaging. In most cases, it will say, "Wild" or "Wild Caught" or even "Wild Alaskan" or "Wild Pacific" salmon.

It is fine to buy frozen salmon. The so-called "fresh" salmon you get at the grocery store has been frozen and is just thawed by the store for your convenience. Follow the directions on the package for proper thawing.

This salmon recipe goes well with radicchio salad, fresh asparagus with lemon and scalloped potatoes with cheese. Add some crusty homemade Italian bread on the side, and low-fat carrot cake for dessert, and you've got a delicious and healthy meal the whole family will love!

Baked Salmon Recipe

Ingredients

  • 1/4 cup orange juice
  • 2 Tbsp. low-sodium soy sauce
  • 1 Tbsp. Dijon mustard
  • 2 tsp. honey
  • 1 tsp. freshly-grated ginger
  • 1 tsp. minced garlic
  • kosher salt and freshly-ground pepper, to taste
  • 1 pound salmon fillets (preferably wild), defrosted
  • 1/4 cup non-fat sour cream
  • 2 Tbsp. sweet red chili sauce
  • 1 tsp. roasted garlic and caramelized onion jam

Directions

  1. Line a baking sheet with aluminum foil and spray it with nonstick cooking spray.
  2. Whisk together the orange juice, soy sauce, Dijon mustard, honey, ginger and garlic in a small bowl.
  3. Add the salt and pepper. Taste and adjust the seasonings.
  4. Place the salmon fillets in a shallow glass dish. Pour marinade over salmon. Refrigerate the salmon for 30 minutes to 1 hour.
  5. Remove the salmon from refrigerator and bring to room temperature (this will take about 15 minutes). Meanwhile, preheat the oven to 400 degrees.
  6. Place the salmon on the prepared baking sheet. Bake 12 to 15 minutes or until fthe ish flakes easily.
  7. While fish is baking, prepare the sauce: Whisk together sour cream, sweet red chili sauce and garlic and onion jam. Serve with salmon.
